Lazy Pizza - Easy

Hope where you are it's cool.  The weather finally broke the other day ... temps only around  90.  Almost chilly.  Almost ...

Anyway, on to the show.

I used to make English muffin pizzas because they were quick and easy.   And even though they need to be made in an oven (or a toaster oven to really help keep the kitchen cool), it was a very speedy 10-15 minutes from bag to table, which is almost nothing as long as the air conditioner holds up (did I mention the frosty 85 outisde?).














Now I make 'em with these new-fangled thin sandwich thingies.  Because they are thinner than English muffins.  And more pizza-ish.  

And a LOT thinner if I thought to split them in half before using.   Not even any major tools or sharp instruments needed.  Unlike English muffins, these babies are conveniently pre-sliced for your convenience.  Mine, too, if I were a little more observant.  Oh, well, even whole they still make delicious thin-crust personal pizzas.

Lazy Pizza - Easy
Serves 8

Olive oil for greasing (optional)
8 whole thin sandwich thins (or 4 split ones)
4-8 Tbl. pizza sauce (or marinara sauce) , divided
8 tsp. grated parmesan cheese, divided
8 ozs. shredded mozzarella cheese, divided

 Preheat oven to 450F..  If you are sloppy with sauce or tend to be too generous with cheese, lightly grease large cookie sheet.   Arrange 8 whole sandwich thins (or 8 split sides set cut side up) in a single layer on the large cookie sheet, preferable a rimmed large cookie sheet if you tend to be too generous with the cheese.














Spoon on  half to one tablespoon of sauce on each round, according to taste.  YoungerSon prefers the minimum amount of sauce, and I prefer the whole tablespoon.  Using the back of the spoon, shmear the sauce evenly around the round, getting close to but not up to the edge (like a real pizza).














Sprinkle a teaspoon of parm cheese on each round.  Usually I like to grate my own Parmigiano, but, there was this sale on the pre-grated stuff ...














While the pre-grated parm was on sale, only whole blocks of mozzarella was.  *Luckily* my oven is slow to heat up so I had the *luxury* to take a few extra minutes to slice 'n dice.















Top rounds evenly with the moz cheese.














By the time you are ready, the oven should be as well.














Bake at 450F for 5-10 minutes, or until cheese melts and starts to brown and bubble.    Note to self -- take own advice next time and lightly grease large cookie sheet..














Remove sheet from oven.  Set pizzas sit on the cookie sheet for a minute to let the cheese firm up slightly, then plate and serve.

  1. These are most definitely a great idea. I've never cared for those flat things as sandwich bread, but yes, they look perfect for quick pizzas. Oh the options, eh? Thanks so much for sharing.

    I love pizza, but cook it require more time than sometimes we have, that's one reason you post is great! Thanks for share!
