Greek Chicken Skewers with Tzatziki Sauce














It is mad hot.  Literally 100F in the shade.  And probably hotter in the mostly unshaded library's parking lot, which is where I spent 3-7pm tending the library's table o'flyers and stuff at the local farmer's market.  An umbrella, a gallon of water and a spritzer bottle were all used in a futile attempt to beat the heat.   Dinner time was leftovers.

However, here's a dish I made the other day, but didn't get around to posting until now.  Oregano is thriving in the garden, and this was the first time this year I was able to use the fresh stuff. Actually, there were other times I could have used it, but I forgot it was thriving in the garden.  But I digress ...

Greek Chicken Skewers with Tzatziki Sauce

Yield: 4-8 appetizer servings (1 or 2 skewers per serving)


8 wooden skewers
1/4 cup fresh lemon juice
1 Tbl. chopped fresh or 1 teaspoon dried oregano
1 Tbl. olive oil
1/2 teaspoon salt
1 Tbl. minced garlic (bottled ok)
3 skinless, boneless chicken breasts, cut into 1-inch pieces
1 medium zucchini, quartered lengthwise and cut into 1/2-inch-thick slices
1 large onion, cut into 1/2 inch thick slices, then quartered

1/2 cup cucumber, peeled, seeded, and chopped
1/2 cup plain parve sour cream or yogurt
1 tablespoon lemon juice
1/2 teaspoon salt
1 tsp. minced garlic (bottled ok)

Soak 8 wooden skewers in water.  Add the next 5 ingredients to a food-safe plastic bag.  Twist closed, hold tightly and gently shake to mix. Add chicken to bag.  Tie shut and turn a few time to coat pieces. Allow chicken to marinate for at least 10 minutes, turning once or twice.

While chicken is marinating, turn on grill to high, then start making the tzatziki sauce.




 









In a 2 cup or larger bowl (not like the puny one above), combine cucumber, parve sour cream,  lemon juice, salt, and  garlic , stirring well.   Refrigerate until ready to serve skewers.

When the grill is hot lightly oil grill.  














Remove chicken from bag and discard excess marinade, if any. Thread the chicken, zucchini and onion onto the soaked skewers.














Place skewers on grill.  Immediately turn heat to medium.  Cook 8-10 minutes or until chicken is done, turning once or twice.

Serve chicken with tzatziki sauce.
